Kålpudding – Cabbage casserole

A classic Swedish recipe modified to satisfy the carb- conscious gourmet.


1 medium head of white cabbage.

2 pounds of ground beef

1 small yellow onion

1 egg

2.5 dl cream

1 T soy


Freshly ground white pepper



Remove the inner stalk of the head of cabbage. Chop the cabbage in small (2”) pieces.

Fry the cabbage in butter, let simmer for 10 minutes in 2 dl of cream, ½ dl of dark syrup, salt and white pepper.

Mix ground beef with the finely chopped yellow onion, one egg, ½ dl cream, soy,  salt and pepper, add  5 dl of the cabbage.  Mix thoroughly, best result is if you mix with your hands.

I owen safe baking dish add one layer of cabbage.

Add one layer of the ground beef mix, cover with the last layer of cabbage.

Bake in 390 degrees owen for 45 minutes.

Serve with lingonsylt and boiled Yukon Gold potatoes. The carb conscious gourmet will not serve the cabbage casserole with potatoes.
