Midsummer Eve in Sweden today

Today Sweden is celebrating Midsummer with pickled herring, snaps, beer and Swedish Strawberry Cake. On Sunday Swedes in the Tampa Bay area can join the Swedish Club of Tampa Bay's annual midummer fest. They will be celebrating in the beautiful Fort de Soto Park, Shelter 1, fee for attending is $15 for non-member families or $7 per person. You are asked to additionally bring a typical Swedish midsummer dish to this event that starts at 2pm. You can always bring a Swedish Strawberry Cake to the event, on a reader's kind request I will share the recipe for the cake our kids made last weekend.



Swedish Strawberry Cake

Sponge cake

3 eggs
3 dl [1 ¼ cups] sugar
1 dl [½ cup] water

3 dl [1 ¼ cups] wheat flour
2 tsp baking powder

2 tsp vanilla sugar
75 g butter


1 package (5.1 oz) of Jell-O instant vanilla pudding and pie filling
Strawberry jam and sliced strawberries


Whole strawberries
Whipped cream

Whisk the eggs and sugar until white and fluffy, whisk in baking powder and vanilla sugar, whisk in the flour. Melt the butter and mix with water and allow boil, whisk in the hot butter mix. Immediately pour 2/3 of the batter into one circular cake pan and the remaining 1/3 of the batter into the second cake pan. Bake at 175-200C (350-400F) for 15 min or until golden and no longer stick to the sides of the baking pan, cool, remove from pans, and slice larger cake into two equal layers.

Fill with strawberry jam, sliced strawberries and plenty of vanilla pudding. Decorate with whipped cream and whole strawberries.

Refrigerate until serving.
