Blue dessert for 4th of July
Klappgröt is a traditional Swedish dish made from seminola or farina grains, I prepared it with blueberry preserves instead of lemonade and it got a nice blue color and great flavor.
Blue porridge
Klappgröt or Trollgröt, Troll porridge, is a simple yet heavenly desert, for freshness I served with minted the whipping cream.
0.4 cup/1 dl farina
0.8 cup/2 dl blueberry preserve
3/4 cup/0.5 l water
0.5 lemon
Mint Whipped Cream
put 1/2 cup/1.2 dl of heavy whipped cream together with a sprig of mint in a jar overnight in the fridge, take out the mint sprig, add a tablespoon of confectioners sugar to the cream and beat until stiff.
Mix preserves and water in a pan and heat to a boil. Whisk in the farina. Lower the heat and allow to simmer for about 5 minutes. Stir frequently to avoid burning the porridge.
Put the hot porridge in a large bowl and lower it into iced water, with mixer whip the porridge until it has cooled down. Mix in the juice from half a lemon and if not sweet enough add some sugar. Serve with mint whipped cream and fresh blueberries.
