Lax & Leeks Muffins

Easy to make Nordic bites for the summer table or picnic.
Lax & Leek Muffins

2 cups/275 g all purpose flour
2 cups/210 g  whole wheat flour
1 tablespoon/1 msk baking powder
2 teaspoons/2 tsk sugar
2 teaspoons/2 tsk kosher salt
3 large eggs
1 1/4 cup/3 dl water
1/3 cup/1 dl canola oil
 3/4 cup/2 dl plain greek yoghurt

filling
1 leeks, chopped and sweated soft in plenty of butter in a skillet on medium heat.
4 oz cold smoked salmon, chopped

Mix the dry ingredients. Whisk the eggs fluffy and mix them with water, oil and yoghurt. Mix the wet and dry ingredients and add the filling. Add the mix to a buttered 12 cup muffin pan and bake for 30 minutes in 350F/175C oven.
