Cauliflower terrine, inspired by the Nobel Prize Banquet

Inspired by the Nobel Prize Banquet menu I made a cauliflower terrine, came out very good, excellent replacement for potatoes actually.
Cauliflower terrine - Blomkålsterrin
1 head of cauliflower
1/2 cup heavy cream
1/2 cup half and half
4 eggs
1/3 cup grated Parmesan cheese
salt and pepper

Break the cauliflower into small florets, boil them in salted water for 5 minutes. Place parchment paper in two oblong bread pans and put the boiled florets on the bottom. Whisk together heavy cream, half and half, eggs and cheese and pour it over the florets.
Bake in 390F/200C for 35 minutes. Cool overnight, cut into squares, heat and serve.
