Matjes Salmon

This dish has some Scandinavian flavors that we long for during the summer. The salmon is baked with matjes herring and served with leeks and dill crisp bread.
Matjes Salmon

1 side of salmon
1 2 oz jar of matjes herring (available at IKEA)
1 zest and juice of one lemon
2 tablespoons of canola oil

Put the whole salmon side on a baking sheet and sprinkle chopped herring over the filet and add lemon zest, juice of one lemon, half of the matjes brine from the jar and the canola oil. Bake in 390F oven for 15 minutes. Serve with leeks that have been sauteed until soft and dill crisp bread (available at IKEA).
