Cabbage Trio

I found a beautiful head of fresh, green cabbage had to buy it. I made three sides from it; Swedish cole slaw, cole slaw and oven roasted cabbage.
Prep cabbage for slaw and salad

Slice 2/3 of the cabbage with a cheese slicer to get as thins slices as possible. Put it in a colander and mix in 2 teaspoons of salt and one teaspoon sugar and mixed it with the cabbage and let it sit for 5 minutes. Carefully squeeze out fluids and rinse under cold water, dry on a kitchen towel.

Swedish cole slaw
I call it Swedish because it is always served with pizza in Sweden.

1/3 of big cabbage head prepared as above.
2 tablespoons canola oil
2 tablespoon white wine vinegar
1/2 tablespoon salt
1/2 tablespoon black pepper
1 tablespoon dried oregano

Whisk together the dressing ingredients and mix with the cabbage. Let is rest in the fridge at least overnight.

Cole slaw

1/3 of a big head of cabbage prepared as above.
1 big carrot, shredded
1/2 cup of mayo
2 tablespoons of juice from bread and butter pickles
salt and black pepper

Mix the ingredients to the dressing and add to cabbage and carrot.

Oven roasted cabbage
1/3 of a big cabbage head, coarsely chopped.
1/3 cup heavy cream
1/3 cup sour cream
1/4 cup maple syrup
2 tablespoons herbes de provence
salt and black pepper

Mix all ingredient in a pan and bake in 400F oven for 45 minutes.
