Matjes asparagus
This recipe was inspired by Ottolenghi. I substituted the capers with a more Nordic flavor of matjes herring. Came out surprisingly good.
Boil a bunch of green asparagus for 4 minutes,
allow to cool. Chop two hard boiled eggs. Chop 4 - 5 pieces of Swedish
style matjes herring. Sprinkle egg and matjes over the asparagus, serve
chilled.
