5:GrapeWine Chicken
This is a very tasty dish, easy to make and good enough to serve at a dinner party. I serve it with halved brussel sprouts.
GrapeWine Chicken
4 chicken thighs bone in and with skin.
Marinade
1 tablespoon olive oil
1 table spoon apple vinegar
1 tablespoon olive brine
1 cup pitted green olives
1 cup seedless red grapes
1 tablespoon herbes de provence
2 sliced garlic cloves
Roasting liquids
1/2 cup of white wine
1 tablespoon licorice syrup (can be replaced with your favorite syrup or molasses, for example pomegranate syrup)
salt and pepper
Mix all ingredients of the marinade, pour into a plastic bag and add the chicken thighs. Allow to marinate in the fridge 12 - 24 hours.
Put chicken and marinade in an oven safe dish, mix wine and syrup and pour over chicken thighs, salt and pepper.
Roast in 350F oven for 45 minutes.
I pour some of the cooking liquids on a plate, put some brussel sprouts cut in halves with cut side down, and top it with the chicken. Brussel sprouts are excellent to soak up the good broth and in this way I do not need to add any carby stuff to this dish.
