Swedish comfort food at its best, perfect as a side for a fall dinner. Always a favorite among my American friends.
Swedish Potato Gratin

8 potatoes, peeled and sliced in 1/3 inch slices
1 leek, cleaned and sliced in 1/3 inch slices
2 cloves of garlic, peeled, crushed and sliced
1.5 cup of heavy whipping cream
1.5 cup of grated Jarlsberg cheese
3 tablespoons of butter

I an oven safe dish put a layer of the peeled potatoes and top with leeks and garlic, salt and pepper, then add another layer of potatoes, leek and garlic, salt and pepper, top with potatoes, carefully press down the potatoes with your hands, pour the cream over the potatoes and sprinkle the grated cheese over the dish and top with dots of the butter.
Bake in 435F oven for 45 minutes until potatoes are soft and the top is golden brown.
If you have any leftovers this dish is perfect to freeze.
